Vankaya kothimeera karam or Brinjal coriander curry


Brinjal is the king of vegetables and loved by most of the people. Brinjal can be cooked in different varieties and is very tasty to eat with rice or roti. This curry is simple with minimum ingredients and easy to prepare.

Preparation Time: 20 minutes.
Serves: 3 people.

Ingredients:

Brinjal:  1/4 kg ( Sliced length wise)
Coriander Leaves: 1 bunch
Green Chillies: 6 ( Can add 1 0r 2 if you eat spicy)
Ginger: Small Piece
Oil: 3 spoons
Salt to taste
Pinch of Tuermeric powder
Asafoetida: small pinch

Procedure:
Take green chillies, coriander, ginger and prepare a fine paste.
Heat oil in a kadia, add brinjal pieces, turmeric powder, asafoetida stir for 2 minutes and add salt. Cook in medium flame till brinjal becomes tender.
Now add the green chilli coriander paste and cook for few minutes stirring in the middle.
Take curry into serving bowl and serve with steamed rice along with ghee.
