Snake gourd Coconut curry
Snake gourd is a vegetable which looks lengthy and is common in asian countries. This can be prepared with moong dal or coconut. Here is the procedure to prepare snake gourd curry with coconut. This is a simple recipe and tastes good.
Preparation time 30 minutes
Snakegourd: 1 cup (diced
Coconut: few pieces.
Green chillies: 4
Red chillies: 1
Urad dal: 1/4 tsp
Bengal gram: 1/4 tsp
Mustard seeds: 1/4 tsp
Cumin seeds: 1/4 tsp
Salt to taste
Coriander to garnish
Take the diced snake gourd pieces into a large bowl add water and boil it till they are cooked
Grind the coconut pieces, green chillies into paste.
Take a kadai add 1 tsp oil and add mustard seeds. When they splutter add bengal gram, urad dal , cumin seeds and red chillies saute till they are golden brown.
Now add boiled snake gourd pieces. Add salt and cover with a lid, simmer for 5 minutes.
Add coconut and green chilli paste. Saute it and cook for 2 minites on low flame.
Garnish with coriander and serve hot with steamed rice along with ghee.
